HEALTHY CARROT CAKE RECIPE

- 1 1/2 cups whole wheat pastry flour
- 2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/8 tsp kosher salt
- 1/8 tsp ground cloves
- 1/4 cup coconut oil melted
- 2 large eggs
- 1 tsp vanilla extract
- 2/3 cup pure maple syrup
- 1/2 cup plain greek yogurt
- 1/3 cup plain unsweetened almond milk
- 2 cups carrots about 3 medium, grated
- 1/2 cup raisins
- 1 1/2 cups plain greek yogurt
- 2 tbsp pure maple syrup
- 1 tsp vanilla extract
First, preheat your oven to 350 degrees Fahrenheit and coat a 9″ x 13″ baking pan with coconut oil.
In a medium mixing bowl, combine one and a half cups whole wheat pastry flour, two teaspoons baking soda, a teaspoon of ground cinnamon, a half teaspoon ground nutmeg, an eighth teaspoon ground cloves, a quarter teaspoon ground ginger, and an eighth teaspoon kosher salt, and then set aside.
In a separate mixing bowl, whisk together two large eggs, a quarter cup melted coconut oil, a teaspoon vanilla extract, two-thirds cup pure maple syrup, a half-cup plain Greek yogurt, and a third of a cup plain almond milk.
Now, we’re going to add those wet ingredients to the dry ingredients, and stir until they’re just incorporated. Then, we need to grate about three medium carrots to make two cups freshly grated carrots. Now, gently fold in the grated carrots and half a cup of raisins. If you don’t like raisins, you can totally leave them out of this recipe. Pour the mixture into the prepared baking dish and smooth out evenly.
We’re going to bake for 20 to 25 minutes, or until a toothpick comes out clean. Now, remove the cake from the oven and allow it to come completely to room temperature before we do the frosting.
Then, in a small mixing bowl, stir together one and a half cups plain Greek yogurt, two tablespoons pure maple syrup, and a teaspoon of vanilla extract. Once the cake has cooled, spread that Greek yogurt frosting evenly over the top. To allow the frosting to set, place the entire cake into the fridge for about one to two hours before slicing and serving.
